Prescott Preservation Commission Approves Renovations to Former Colt Grill Site

The City of Prescott’s Preservation Commission has approved new signage and exterior improvements for Doc’s Barbecue and Whiskey, a restaurant opening soon at the corner of Montezuma and Goodwin streets, formerly Colt Grill.


The approved sign will feature white lettering with an amber halo LED illumination—meeting historic district design standards. The commission also gave the green light to plans for a level patio, ADA-compliant pavers, a new safety fence, and a metal patio cover to replace an earlier fabric design. An electric smoker with cleaner emissions will be moved to a less obtrusive location.


Commissioners also agreed to allow removal of old, deteriorating city-owned planters along the sidewalk—improving safety and aesthetics.


The restaurant is aiming to open its doors the first week of December.
