Former Colt Grill Employees Plead Guilty to Hiring Illegal Aliens

The Yavapai County Sheriff’s Office has provided an update in the Colt Grill case that resulted in the arrest of the owners and the closure of the restaurants last year. Two former employees have pleaded guilty in federal court to charges involving the hiring and harboring of undocumented workers.

Federal prosecutors say Luis Pedro Rogel-Jaimes and Iris Cristal Romero-Molina admitted to employing undocumented workers at Colt Grill locations in Prescott, Prescott Valley, Sedona, Cottonwood, and Foley, Alabama.

Both defendants remain in federal custody and are scheduled to be sentenced in June. Authorities say they are expected to face deportation proceedings after completing any prison sentences.
